Easy Meals

I usually spend a little time on the weekend prepping and cooking food for the upcoming week. It saves me time and money since I am gone almost the whole day because of school and work.  I pack these with me everyday, along with a peanut butter sandwich and a drink!

This weeks lunch/dinner are Chicken Pasta with Broccoli & Teriyaki Noodles with Chicken

I started out by boiling 6 pieces of chicken breast

Chicken Pasta was first.  I put all the ingredients together into a large saucepan and brought it to a boil.  After boiling, I lowered the heat and let it simmer for about 8 minutes….

Once the liquids have soaked, I turned off the heat and let it cool.  Then I evenly distributed them into 3 containers. Like this….

After it has cooled, I closed the lids, and transferred them into the freezer.

Now, the Teriyaki Noodles with Chicken.

I sliced the remaining 3 pieces of chicken breast and threw them with the rest of the ingredients. The concept is the same, bring water to a boil, stir, then let it simmer till cooked. And this what I have….

Let it cool, put them in containers, then freeze.

They may not look very pleasing but they’re delicious. I could devour an entire pan in one sitting. LOL

I was able to put all this together in less than an hour. It’s very easy to do if you have planned things ahead of time.

As for me, I try to include a good serving of protein in all my meals to help my body repair and recover from the stress I put it through in the gym. That’s why I eat a lot of high protein foods such as chicken and fish.

Well, that was it for this week. I am gonna cook brown rice later, divide them into portions, then freeze them also… but there’s not really much cooking involved in doing that 😛

Next week, it’s Garlic Butter Rice with Chicken 😛 and maybe Chicken Alfredo!

Did you hear that?

I’m sure all of Colorado heard the thunder a few mins ago.  That was possibly the loudest single electric discharge that I’ve ever heard.  The vibration from the sound lingered for atleast a minute before it finally stopped. Wow.

Classy McNasty

I weighed myself today and I am now ten pounds heavier than I was four weeks ago, before I came back home to Hawaii. I’ve gained more weight in a month than I did after a whole year in college. I’m getting side tracked with all the ‘ono licious’ foods, time to get back to work!

Shokudo Japanese Restaurant

If you are ever in Honolulu and looking for a great Japanese restaurant to eat, you should stop by Shokudo Japanese Restaurant in Ala Moana Pacific Center – Ground Floor , 1585 Kapiolani Boulevard. Me and my girlfriend went there last Saturday for our small anniversary and I had a great time. It was only my first time and I fell in love right away! I have eaten a lot of Japanese food before and the food at Shokudo were all foreign to me. The portions are very big so you can share. Make sure you call for reservations because the lines can get very long, but it is well worth the wait.

Say Goodbye

My first year of college is officially over. I have learned a lot this past year and realized so many great things. College is what you make of it. No one will tell you to go to class anymore and you are responsible for every decision you make.

What’s the best of part being finished? Going home of course! 🙂

I was scared that my flight may be delayed the day I was going home because Colorado’s weather is like Jaimie Foxx, its “unpredictable.” Me and Scottie, my roommate for next semester, rode through a storm for an hour like we were in search of severe weather.

Here are some pictures I took while I waited to board my flight.. I stopped at LAX for fifty minutes before I went straight home.

Bittersweet

I have spent all of my afternoon today moving stuff out of my dorm into a storage place for the summer.  It’s such a great feeling now that I am almost done with my first year of college.  I am very happy to be leaving, but sad at the same time to leave the place I called home for almost nine months.  It was the perfect day today to move out.  The weather was a nice and sunny 77 degrees.  I got a little sunburnt from being out for two hours because I helped some of my friends move out their stuff also.

By the time I got back to my dorm, I just had enough time to shower and get ready to go out to dinner with my co workers in Centera.  We went to an Italian restaurant called “Biaggi’s.”  The food was great!  Ordering was a long and delayed process because there was so much on the menu that we wanted to try.  Our waitress came and went several times before she finally the orders.

I ordered “Chicken Pietro.” It was grilled chicken breast marinated in garlic, dijon mustard, honey, and topped with mushrooms with a side of zucchini, yellow squash, and other vegetables.  Dee-lish!

After dinner, my boss gave a little farewell to us all and shared with us a gift called “The Secret” written by Christian D. Larson.  “The Secret” is a motivational letter to help us remember who we are, and to make sure we always be true to ourselves.  Along with that, we were all given mini zen gardens, which was really cool!  I’ve always wanted one! lol.  Overall, it was a loud and fun dinner with a very sad ending.  It was heart breaking when my boss announced her retirement on our staff meeting a couple weeks ago.  She was always energetic and had a smile tatooed to her face everyday I came to work.  I can honestly say, some of the best times I’ve had going to school here was at work, and it was all because of her…

After all that, it is still Finals Week.  I still haven’t done any studying yet, but I will get on that soon.  It’s nice to get a break sometimes.  I just can’t wait to be done so I can go home and see my girlfriend. 3 more days left. 🙂
